Every year, I ask Reid to give me a wishlist of items that he wants for Christmas. He doesn’t want much, but I can usually twist his arm. like many of you, I need a break from dinner duty, so I decided he needed the #2 Blackstone grill. I ordered it asap. At our house, we go through moods with food. Is yours similar? We’re in a major RAMEN mood. Brooks, age 10 has been making it a lot so I asked him to join me in my latest reel making the ramen. We made it at my friend Nikkia’s kitchen. It was fun and did I mention fast?
1 1/2 cup water
1Tb butter
1/2 T ramen seasoning I use clean monday meals
1/2 T chicken broth or bouillon
1 pack of ramen I use the Trader Joes one [we don’t use the sauce]
Instructions: Add 1 and 1/2 cup water then add a 1 tablespoon butter, add 1/2 teaspoon chicken broth or bouillon, bring to a boil. When thats done boiling, add the ramen noodles and the 1/2 teaspoon of ramen seasoning. Cook on high for 1 minute. Turn on low and cook for 3 minutes. Enjoy.

We made it to PIE SEASON. Do you love pumpkin pie as much as we do?
This recipe makes 2 pies, only has 6 ingredients. I buy all organic, and did I mention it’s the best pumpkin pie that you’ll ever taste?
I chose this recipe because it is so simple. The condensed milk conveniently has both the sugar and milk in it, so it’s a two for one. It doesn’t have any bioengineered ingredients and was so good you could eat it for breakfast.
It only took me 15 min to make, so I’ll have time to create the rest of my Thanksgiving feast!
15 minute pumpkin pie *
1 9 inch pre made pie crust
15 ounce can pumpkin puree
3 large eggs
14 ounce sweetened condensed milk
1 1/2 tablespoon pumpkin pie spice
1 tablespoon vanilla extract
3/4 teaspoon salt
I serve with homemade whip cream and pumpkin pie spice added on top.
- Preheat the oven to 350°F. Blind bake the crust for 10-12 minutes.
- In a large bowl, whisk eggs, sweetened condensed milk, pumpkin puree, pumpkin pie spice, vanilla extract, and salt together.
- Pour the pumpkin pie mixture into the pie crust and bake at 425°F for 15 minutes. Cover edges with a pie shield or foil strips, if desired for even baking.
- Reduce the oven to 325°F and bake an additional 30-40 minutes, or until the pumpkin pie filling is set. It will have a slight jiggle to the center.
- Remove from the oven and let cool on a baking rack. Chill until ready to serve.

It has been a constant reminder to rejoice in the good and bad that this year has brought.
After having a serious poison ivy reaction and my whole face blew up to twice its size (yes, I was like something out of a movie), the nerve in my tooth dying, which caused extreme nerve pain, my IG account was suspended due to a glitch, and we moved ourselves. Yes, you read that right! After the movers we hired in Atlanta, GA, left after an hour complaining that it was “TOO HOT,” me, Reid and the kids packed up a semi-truck and a half bound for sunny California. Even Levi helped! We were wiped.
Later, I found out that I bulged the disc in my back from that move but didn’t feel the full affects until two months later. Moving right along, I found a lump in my breast so I’l be getting an MRI, and endured throbbing back pain from sciatica nerves, all that to say, it’s BEEN A YEAR.

I’m not writing you to complain but rather highlight the fact that pain is God’s microphone. In the dark days of pain and trying to find relief, I found myself closest to my heavenly Father.

We are where we want to be, settled in the west coast, however renting. We are grateful God graciously brought us back despite the competitive housing market and many details surrounding moving seven people cross country. Reid and I still have the itch to renovate and pine after the killer views in our old house in Pasadena. However, SOOOOO happy to be back in Cali, working.
