The pool is officially open for the season! I’m excited to bring my peasant top along for the ride. I love the peasant top gently tucked into my under $50 belted swimsuit. How cute is that? I then added a bag, hat and necklace. With kids, work and my in-laws in town, gotta keep it simple!

How does a place become your family go to vacation spot?  Every family has that special go to vacation spot.  What is your story?

While growing up, my family loved going to Hong Kong.  I know that sounds strange, but my mom grew up in Hong Kong.  My dad was a pilot, so we would fly standby once a year back in the day when you could still smoke on airplanes.  Yes, those were long trips.  But visiting my cousins in Hong Kong was the best.  They would take us to the best places.  If we got separated, they would say, tell the cab…”NOW CHUN TOE, KOWLOON TONG,” and we would get home. Those trips to the markets to get cloths and grubs would forever be one of my favorite memories.

We had enjoyed many great day trips in California.  Whether that was Lake Arrowhead, Anacapa Island (See post) or Laguna Beach, leaving California was hard.  But knowing Florida beaches would be a short drive away, our sorrows turned to joy.  Florida is a favorite place to take our family.

Here is our tips on traveling to the scenic 30A.  The last few times, we have stayed near Alys Beach.  The community we stay in is called Magnolia By The Sea and we found it on VRBO.  It’s a small community of cottages across the street from the beach.  While small, the house sleep quite a few people.  Perfect for multi-family gatherings or big families.  We like that the beach is private and the community has a heated pool.  The perk for the location is that it is a short bike ride to Alys Beach.  I should mention, Alys Beach is our dream vacation goals.  Someday we want to stay there, but for now we enjoy riding our bikes, playing at the park and getting coffee within the town.  You cannot take a bad picture of this place.  The community is design perfection in my opinion.  Everything down to the window trim colors to the outdoor planters.  Every vista is perfectly harmonized.  Reid and I enjoyed sometime meandering the quaint streets.  Reid admires the architecture and design while I soak in photo shoot inspiration. 

Rosemary Beach is also another hot spot we like to take the kids to in the evenings.  It’s a bustling beach community with a lot of night life and you feel like you are in Europe.  While there are many places to eat and play, here is my brief list of our favorites for your vacation planning enjoyment.

·      Stay:  Magnolia By The Sea (Hint:  Staying outside of Alys/Rosemary Beach saves you $$$ – but you can still enjoy the public hot spots)

·      Eat:  George’s (Alys Beach)

·      Dessert:  Sugar Shack (Rosemary Beach)

·      Drink:  Neat (Alys Beach)

·      Breakfast:  Donut Hole (Inlet Beach)

·      Coffee:  Raw & Juicy (Alys Beach)

·      Do:  Rent Bikes – Don’t forget Sunscreen! I like this one – non toxic.

·      Shop:  Don’t be silly, this is a beach vacation

Thank you for being faithful readers of my blog! I appreciate you all and love hearing from you, whether by e-mails, direct messages, comments or even text. It’s been a pleasure getting to know you. As you have gotten to know me, you may notice we always have some life-changing event going on. My in-laws joke that they can’t keep up with us! Reid and I are entrepreneurs at heart and with that comes a little fly-by-night hustle. Thus, we move a lot, relocate to different cities, have babies, dream up new ideas and have a thirst for creating and recreating. I’m thankful that by many years of hard work at Shalicenoel.com, that we can turn my personal style into a clothing line. It’s beyond my wildest dreams and it is so special to me that so many of you have been alongside me throughout this journey. I am grateful for you!

I’m obsessed with the salty sweet flavors of Pad Thai. Since we aren’t going out to eat, I found a recipe to make at home. It is a healthier version to try without losing the amazing flavor. The recipe is good for 4 people and only takes 30 minutes. Let me know what you think!

Keto Pad Thai

Sauce

3 tbsp fish sauce
1 tbsp rice vinegar
1 tsp chili paste
1 tbsp peanut butter
1 tbsp coconut aminos
2 tbsp lime juice
5 drops stevia

Ingredients

1 16 oz package shirataki noodles
1 lb chicken breast, butterflied and cut into bit sized pieces
2 eggs, beaten
1/2 tbsp ginger, minced
2 cloves garlic, minced
3 large scallions, thinly sliced, keep whites and greens separate
1 1/2 cups bean sprouts

Toppings
1/4 cup peanuts, chopped
1/3 cup cilantro leaves, chopped
  • Wash and dry fresh produce. Thinly slice scallions, keeping whites and greens separated. Peel and mince ginger and garlic. Roughly chop cilantro leaves.
  • Butterfly the chicken breast then cut into small bite sized pieces.
  • In a small bowl, whisk together all sauce ingredients until well combined and smooth.
  • Heat a drizzle of oil (I used sesame oil) in a wok or large pan over medium high heat. Add ginger and garlic and stir fry until fragrant (about 30 seconds), stirring frequently. Add scallion whites and  1 tbsp sambal oelek to wok with ginger and garlic and continue stir frying until scallions have softened about 2-3 minutes.
  • Once scallion whites have softened, add chicken to wok with the ginger, garlic, scallions, and chili paste. Stir fry chicken for 5 minutes or until lightly browned and cooked through.
  • While chicken cooks, beat 2 eggs until well combined. Drain and rinse shirataki noodles thoroughly under hot water for about 2 minutes.
  • Once chicken has finished, remove the chicken stir fry the wok or pan and set aside. Add shiratki noodles to the wok and stir fry noodles until firm, about 5-7 minutes.
  • Once noodles have cooked, add the beaten eggs to the wok with the noodles and stir fry for 2-3 minutes until the eggs have cooked. Stir frequently to break up/scramble the eggs.
  • Once eggs have cooked, add the chicken stir fry, pad thai sauce, and bean sprouts to the wok. Continue stir frying for about 2 minutes until all ingredients are well combined.
  • Top with scallion greens, crushed peanuts, and cilantro to serve. Enjoy!

For me, a peasant top is a non-negotiable in a girl’s wardrobe. A quality one is hard to find. I like it to be heavy, not too lightweight, a tie, eyelet detail is fun, and THE FIT MUST BE PERFECT. This new bag from Tamara Mellon, who originally founded Jimmy Choo, fits my water bottle, wipes, and feels like AMAZING nubby leather. The color here is bone, which I was totally on the fence about. I’ll admit I’m a camel bag junkie and even tried on the camel and black colors. But you know which one won me over? BONE. Love the unusual color to my handbag collection. It can be worn three ways and deep enough to fit a laptop or chipotle burrito. Just kidding. It converts to a tote using the handles, cross body bag or shoulder bag. How cool is that?
